5 Fun Treats For St. Patrick's Day
With St. Patrick's Day right around the corner, it's time to start thinking about fun ways to incorporate a little Irish luck and a lot of green fun into your treats. Dust off the ol' mixing bowl and stock your country kitchen with ingredients to make these great treats for your St. Patrick's Day celebration.
Grab the pancake molds for this one and surprise your family with fun shamrock-shaped pancakes! Top them with sliced green fruit like grapes, kiwi and honeydew, or make it extra special with green whipped cream! If you can't find a shamrock mold, you can use a heart mold and put the four pancakes together (inverted) to make the shamrock shape!
Green Mac & Cheese
Some people might call this a meal, but we all know mac and cheese is still a treat. You can make St. Patrick's Day super fun for the kids with this great green pasta dish. Start with a simple mac & cheese and add green vegetables like spinach, peas and broccoli, or you can even make an avocado "cream" sauce with basil and parmesan. If you're worried your kids won't eat this "green" version, how about just plain mac & cheese in a green bowl? That's just as festive in our book.
Rainbow Fruit Kebabs
If you want to harness the luck o' the Irish, create colorful rainbow kebabs with fruit! Using a fruit from each of the ROY-G-BIV colors, you can make fun fruit kebabs, or shape the individual fruit pieces into a rainbow! Either way, you've got to have the pot of gold at the end. To continue with the healthy theme, wrap small gifts, like funny books, nail polish, or nuts in gold wrapping. Or you can give the kids an actual treat! Grab a little bowl, ramekin, or silicone muffin cup and fill it with sliced banana or pineapple, or chocolate gold coins. To add an extra special treat to the fruit kebabs, try sticking a Rolo candy on the end for the "pot o' gold."
Chocolate Guinness Cupcakes
Nothing says St. Patrick's Day like Guinness, so why not spice up your traditional chocolate cupcake and make it a Guinness cupcake with green frosting? You can follow just about any recipe, but for the frosting, make it green with something healthier like pureed spinach, pistachio butter or Matcha green tea powder!
Green "Thin Mints"
We love this recipe for fun chocolate-peppermint sugar cookies, and if you dip them in a little melted chocolate and cover them with green sprinkles or sugar crystals, you've got perfectly decorated green thin mint cookies!
