6 Ideas For What And How To Cook When You're Camping

Oatmeal with Cinnamon and Walnuts
- 3 cups quick-cooking oats
- 1-½ cups milk
- 1-½ cups water
- 2 cups raisins
- Dash of cinnamon
- Sugar to taste
Bring water and milk to a boil. Stir in oatmeal and remove from heat. Continue to stir while adding remaining ingredients. Let stand until cool enough to eat. Makes four to five servings.
- 12 oz. breakfast sausage
- ½-cup yellow onion
- 3 Russet potatoes, peeled, cooked and shredded
- 6 eggs, beaten
- 1 cup cheddar cheese, shredded
In a skillet over the campfire, brown the sausage. Do not drain. Add the onions and stir. Cook until the onions are soft and translucent. Transfer to a bowl. In the skillet with oil leftover from the sausage, add the potatoes and distribute them evenly in the pan. When the bottom is browned, stir in the sausage and onions and the eggs and cook until the eggs come together. Remove from heat, sprinkle cheese on top and serve.
You also have the option of boiling the meal. Pre-cook the meat at home and bring sealable, plastic sandwich bags. Bring a pot of water to a boil. Crack two eggs into each bag, sprinkle in the meat, vegetables and cheese. Massage the bags a little to break up the eggs and mix the ingredients. Drop the bags in the boiling water and let them cook for 5-8 minutes. Serve. Makes four to five servings.
- 4 individual bags of tortilla chips
- 16 oz. cooked ground beef seasoned with taco seasonings (chili powder, cumin, garlic salt)
- 8 oz. shredded cheddar cheese
- 1 bag of shredded lettuce
- 2 tomatoes, diced
- Salsa (optional)
- Sour cream (optional)
- Avocado (optional)
Open the bags of chips and divide the remaining ingredients evenly between the bags. Mix and serve. Makes four walking tacos.
Shish kebabs are portable and easy to prep before you leave for your camping trip. Just make sure any meat you plan to cook is properly cooled when you're traveling and storing it at your campsite.
- 1 lb. sirloin steak, cut into one-inch cubes
- 1 lb. white mushrooms
- 3 green bell peppers, cut into one-inch squares
- 2 yellow onions, quartered
- 1 lb. cherry tomatoes
- 2 yellow squash, cut into one-inch cubes
- ¼-cup vegetable oil
- Salt and pepper to taste
Skewer the vegetables and meat, alternating between colors. Brush with vegetable oil and place on grill rack. Cook for about 10 minutes, occasionally rotating to cook evenly. Serve. Makes four kebabs.
- 4 pre-cooked Polish sausage or kielbasa, sliced
- 4 small russet potatoes, cubed
- 2 large yellow onions, quartered
- 4 medium carrots, peeled and sliced
- 4 zucchini, sliced
- Vegetable or olive oil
- Salt and pepper
- Heavy-duty aluminum foil
Tear off four sheets â?? about 18" â?? of aluminum foil. Fold in half. Mixed together the meat and vegetables and sprinkle in some salt and pepper. Distribute the mixture among the sheets of foil, placing the ingredients in the center of the sheets. Drizzle with oil. On each sheet of foil, bring two opposite sides of the sheet to the center and fold a half-inch and continue folding down until it's formed a seam. Fold up each of the open sides tightly to seal the ingredients in. Place on grill rack over campfire. Cook on one side for about fifteen minutes, flip and let cook on the other side for 15 minutes. Serve. Makes four servings.
- 4 Italian bread rolls, sliced
- 1 lb. smoked turkey
- ½-lb. cheddar cheese, sliced
- 1 tomato
Make a hot sandwich with all your favorite fixings over the campfire. Wrap the sandwiches in aluminum foil and place on the grill rack for about three minutes on each side. Serve with your favorite condiments. Makes four paninis.
