It's an answer to keep from making a mess when making whip cream for pies, for whipping the mixture for Swedish pancakes, having a partial cover while using the mixer whipping things up. It keeps it from spattering out all over the counter until it thickens. Then you can put the center cover to put it in the refrigerator to store until all gone Love Love"
